Cellar technology
Selection of the best-positioned grapes, destemmed, crushed, short maceration, gentle pressing in a pneumatic press, temperature-controlled fermentation in stainless steel tanks, then aging in stainless steel tanks.
Food/drink recommendation
Ideal accompaniment to fish, seafood and shellfish, also goes well with asparagus with butter or hollandaise sauce.
